Chocolate is never going to be a bad idea. And when you use it to make a muffin, its a brilliant idea for breakfast. ( If you don’t want it for breakfast, then have it for any other time.)

Ingredients
250g Cake Flour
30g Cacao Powder
10ml (2tsp) Baking Powder
2,5ml (1/2tsp) Bicarb
2.5ml (1/2tsp) Salt
150g Castor Sugar
120g Chocolate Chips (plus some extra for topping)
1 Egg
250ml Milk
90ml Canola Oil
10ml Vanilla

Method
Pre-heat the oven at 200 deg Celsius. Fill a 12 piece muffin tray with muffin cups.
Combine all the ingredients except the Chocolate chips. Mix well. Once combined, add the chocolate chips (keep a hand full aside to top the muffins).
Spoon the mixture into the the muffin cups and add a few chocolate chips on top of each muffin.
Place in the over and bake for 20 minutes.
Remove once baked and let it cool a bit before eating.
Just a bit so that you don’t burn your mouth.
